Holistic Nutrition - Bachelor of Science
The CCNH holistic nutrition programs take into account the effect of foods on body, mind, spirit, and on the earth itself. After learning about the fundamentals of nutrition, students in the B.S. program are introduced to natural health and traditional naturopathy as well as to holistic health and lifestyles, biology, and cancer prevention. Other topics include holistic nutrition, cooking for holistic nutrition, how the diet may influence the state of health, and how it may be used for healing. In addition, this program contains four elective courses.

Holistic Nutrition - Master of Science
The CCNH holistic nutrition programs take into account the effect of foods on body, mind, spirit, and on the earth itself. After acquiring foundational knowledge in holistic human development, chemistry, and anatomy, students in the M.S. program will find courses that focus on specific nutrition topics: enzymes, antioxidants, weight management, and women's issues. This program also includes three electives and a thesis. Those who prefer may take two additional electives instead of completing the thesis, although this project is an excellent preparation for the dissertation that students will complete at the doctoral level.

Holistic Nutrition - Doctor of Philosophy
The CCNH holistic nutrition programs take into account the effect of our foods on body, mind, spirit, and on the earth itself. The Ph.D. program begins with an examination of nutritional healing as found in traditional Chinese and in Ayurvedic medicines. Other topics in this program include dietary fats and oils, the nutrition of traditional societies, and how nutrition affects the mind, the musculoskeletal system, immune function, and the quality of life into aging. This program includes four elective courses and a dissertation. Preparatory to the dissertation are courses in research design. Many graduates of this program practice as holistic nutritional consultants. Although not required for the Ph.D. program, students may elect to complete their courses and a practicum designed to assist them in building their skills as practitioners. Many graduates of Clayton College have written books concerning various aspects of holistic nutrition.
